Greek Coffee Source: Modern Greek by Andy HarrisThere is an art to making Greek or Turkish coffee. It is best to make no more then 2 cups at a time so that cacti person can share some of the prized thick foam that forms on top, Try and use a briki (a long-handled brass or metal pot with a pouring lip, watching over it carefully to ensure that the foam does nor boil over. To order Greek coffer in a cafes. simple ask for sketo (unsweetened). metria (with sugar), gliko (sweet) or vari gliko (very sweet). 3 heaping teaspoons Greek-style coffee 2 teaspoons sugar 2 small coffee cups of water Put all the ingredients into a briki or similar small saucepan. Heat over low heat, stirring occasionally, until the mixture begins to rise. Take off the heat. Immediately return to the heat until the mixture begins to rise again. Pour a little of the froth slowly into the two coffee cups. Then pour the remaining coffee into the cups. Serve with glasses of iced water. Makes 2 cups
