Sauteed Bananas with Maple Rum Sauce Source: Lynda's Low-Fat Kitchen: Meatless Meals for Every Day by Lynda A. Pozel4 small ripe bananas 4 Tablespoons toasted coconut for garnish, optional Maple Rum Sauce: 1/4 cup maple syrup 1 Tablespoon dark rum Spray a large skillet with non-stick cooking spray. Cut bananas in half lengthwise and again crosswise. Add to pan and saute over medium heat for one minute on each side. To make sauce: Combine maple syrup and rum in a small saucepan over medium-low heat until bubbly, about 3 minutes. Pour sauce over bananas. Ganish with toasted coconut, if desired, and serve hot.
