Panecillos de Plantano (Banana Cookies)
2 cups flour 1 teaspoon salt 3 teaspoons baking powder 4 Tablespoons butter, softened 3/4 cup milk 2 bananas 2 Tablespoons lemon juice 2 Tablespoons sugar
Preheat oven to 425 degrees F.
Sift together flour, salt and baking powder. Add butter, mix well, add milk and stir only till dampened.
Roll to one-half thickness. Cut into cookies about two inches in diameter and place on a greased cookie sheet.
Slice bananas one-half inch thick, dip pieces in lemon juice and then in sugar and place a slice on each cookie, pressing it down.
Bake twelve minutes, or until golden brown.
Yields three dozen.
