Spicy Seafood Gumbo
3/4 cup flour 1 Tbsp. olive oil 1 Tbsp. minced garlic 2 onions, chopped 2 green bell peppers, chopped 2 stalks celery, chopped 2 Tbsp. chopped parsley 9 cups water 1 can whole tomatoes, crushed 3 bay leaves juice of half lemon 1 tsp. dried thyme 1/4 tsp. red pepper 4 whole cloves salt and pepper to taste 1 pint claw crabmeat 2 lb. shrimp, peeled 2 lb. trout fillets, cut into pieces 1 cup chopped green onions
Brown the flour in the oven for 7 minutes.
Heat the oil in a large pan and sauté garlic, onions, peppers, celery, and parsley until soft.
Stir in the browned flour. Add water, tomatoes, and spices. Cook on low heat for 15 minutes.
Add the crab, shrimp, and trout. Cook for 20 minutes.
Add the green onion and cook until the fish is done.
Remove bay leaf. Serve over brown rice.
