African Peanut Skillet Complete Meal
1 tablespoon vegetable oil 8 to 12 ounces raw turkey or chicken breast, ground or cut in 1-inch pieces 1 onion, chopped 1 to 2 cloves garlic, minced or 1/4 teaspoon garlic powder 1 teaspoon fresh ginger or 1/2 teaspoon ground ginger 1 (15-ounce) can diced tomatoes or 2 cups diced fresh tomatoes 1 medium zucchini, cubed 1 medium yam, peeled and cubed 1 (15-ounce) can garbanzo beans, drained and rinsed 1 to 4 dried red peppers, crushed, or 1 teaspoon dried pepper flakes 1 cup white rice, uncooked 2 cups broth or water 1/2 teaspoon salt 1/2 cup smooth peanut butter
Heat oil in a large skillet over medium-high heat (350 degrees in an electric skillet). Add turkey, onions, and garlic and stir while cooking for 2-3 minutes.
Add ginger, tomatoes with juice, zucchini, yam, garbanzo beans, red pepper, rice, water, and salt. Bring to a boil, cover, and reduce heat. Simmer for 30 minutes.
Stir in peanut butter and serve hot.
Servings: 8-10 servings (1 cup each)
