Pasta Pizza Skillet
6 ounces any medium size pasta 1 pound bulk Italian sausage 1/2 cup chopped onions 1/2 cup chopped green bell pepper 1 (4-ounce) can mushrooms, stems and pieces, drained 4 eggs 1/2 teaspoon salt 1/4 teaspoon black pepper 1 to 2 fresh tomatoes, sliced 1 cup (4 ounces) shredded mozzarella and cheddar mixed cheese Parsley or cilantro for garnish Sour cream (optional) Salsa (optional)
Cook pasta according to package directions; drain and set aside.
In large skillet, cook sausage until no longer pink.
Add onions and peppers. Cook and stir for 5 minutes.
Stir in pasta and mushrooms.
Beat eggs with salt and pepper; pour over pasta mixture. Arrange tomato slices on top. Sprinkle with cheese.
Cover and cook over medium-low heat 10 to 15 minutes or until eggs are completely set; do not stir.
Garnish with parsley or cilantro. Serve with sour cream and salsa.
