BOILED NEW POTATOES
Source: Louisiana Light: Low-Fat, Low-Calorie, Low-Cholesterol, Low-Salt Cajun and Creole Cookery by Roy F., Jr. Guste
Serving: 2

2 cups water
4 whole black peppercorns
1 bay leaf
6 new potatoes
1 teaspoon chopped fresh parsley

Bring the water to a boil with the peppercorns and bay leaf.

Wash the potatoes but do not peel them.

Drop the potatoes into the water and boil gently for 20 minutes, or until they can easily be peeled with a fork.

Drain and serve sprinkled with the parsley.

If you don't care for the- skins (which I hold as the best part of the potato), then remove them after boiling.

VARIATIONS:
New potatoes are delicious boiled in water that has been seasoned with a tablespoon of pickling spice.

Chives can replace the parsley and nonfat yogurt can be used as a sauce for the potatoes.
