MINTED POTATO SALAD
3 medium potatoes 2 medium cucumbers, pared, chopped 1/3 cup chopped fresh mint leaves 1/4 cup olive oil 4 Tbsp. lemon juice 1/2 to 1 tsp. salt 1/4 to 1/2 tsp. pepper
Cook potatoes in boiling water, 15-20 minutes or till tender. Do not overcook. Drain, cool. Peel and slice into large bowl.
Dry cucumbers and add to bowl. Lightly mix in mint. Drizzle with oil. Sprinkle with lemon juice.
Add salt and pepper to taste. Cover and chill until ready to serve.
Servings: 4
Note: This is a good recipe for picnics etc., because you don't have to worry about refrigerating it.
