CROCKPOT PORK CHOPS WITH CRANBERRY STUFFING
4 to 6 medium potatoes, peeled and sliced thickly 4 to 6 boneless pork chops 1 package stuffing mix with cranberries (6 oz) (or add about 1/4 cup dried cranberries to herb-seasoned stuffing mix) 1 cup hot water 1 tablespoon soft butter salt and pepper to taste
Place potatoes in a 3 1/2-quart or larger slow cooker/Crock Pot; sprinkle lightly with salt and pepper.
Top with pork chops; sprinkle lightly with salt and pepper.
Combine stuffing mix with 1 cup hot water and 1 tablespoon softened butter. Spoon over the pork chops.
Cover and cook on low for 7 to 9 hours.
