APPLE CHUTNEY

4 lbs (2 quarts) chopped onions
3 lbs chopped, peeled and cored green cooking apples
4 1/2 cups brown sugar, packed
1 lb raisins, light or dark
3 tbsp molasses
1 tbsp cinnamon
1 tbsp salt
2 tsp ginger
2 tsp ground cloves
Dash of Cayenne pepper

Combine all ingredients in a large cooking pot; simmer, uncovered, stirring occasionally, about 2 hours, or until mixture becomes thick and dark.

Pour at once into hot sterilized canning jars; seal and process in boiling water bath for 15 minutes.

Makes about 6 pints
