CHICKEN WITH PINEAPPLE

1 lb chicken, cut in 1-inch cubes
1 tbsp soy sauce
2 tsp cold water
1/2 tsp salt
1/2 cup green onion, sliced
1/2 cup celery, sliced
2/3 cup pineapple chunks
4 tbsp pineapple juice
1 tbsp sugar
1 tbsp cornstarch
1 tbsp rice wine

Marinate chicken in mixture of soy sauce, water, and salt for 1 hour.

Stir-fry onion and celery; remove from wok.

Stir-fry chicken until browned.

Return the onions and celery to the wok and add mixture of remaining ingredients. Simmer until thickened.

Serve over rice.
