GREEK SPINACH ROLL-UPS
Reynolds Parchment Paper 1 package (9 oz.) frozen chopped spinach, thawed, squeezed dry with paper towels 1/2 cup crumbled feta cheese 1/4 cup shredded mozzarella cheese 1/4 cup chopped Kalamata olives 1 egg 1 teaspoon dried oregano 1 package (10.6 oz.) refrigerated pizza crust 1 tablespoon Italian or Greek salad dressing Roasted red pepper strips (optional)
Preheat oven to 350 degrees F. Line a cookie sheet with a sheet with Reynolds Parchment Paper; set aside. Sprinkle lightly with flour; set aside.
Combine spinach, feta cheese, mozzarella cheese, olives, egg and oregano in a medium bowl; blend well; set aside.
Unroll pizza crust dough onto floured parchment paper-lined cookie sheet.
Brush dough with dressing. Spread spinach mixture evenly over entire surface of dough. Starting with longest side, roll up dough; pinch edge of dough to seal seam. Cut into 12 rolls with a serrated knife. Place rolls; cut side up, on parchment paper-lined cookie sheet.
Bake 20 to 22 minutes or until golden brown. Garnish tops of rolls with strips of roasted red peppers, if desired. Serve warm.
