1 cup ripe breadfruit, uncooked 1 egg, beaten 2 tbsp shortening 1 cup flour, unsifted 1/2 cup sugar 3 tsp baking powder 1/4 tsp nutmeg 1/4 tsp cinnamon 1/4 tsp salt
Combine the breadfruit pulp, beaten egg, and shortening. Mix well.
Sift together dry ingredients. Stir in egg mixture.
Drop by spoonfuls into preheated deep fat (370 F) and fry until golden brown.
Drain on paper towels. Shake in a bag with sugar to coat outside.
Makes about 1 1/2 dozen donuts
