COCONUT MACADAMIA COOKIES
1/2 cup butter or margarine, softened 1/2 cup sugar 1/2 cup brown sugar, firmly packed 1 egg 1 tsp vanilla 1 cup flour 1/2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1/2 cup quick-cooking oats, uncooked 1/2 cup macadamia nuts, chopped 2 cups grated coconut, divided
Preheat oven to 375 degrees F. Grease cookie sheet.
Cream butter; gradually add sugars, beating well at medium speed until light and fluffy. Add egg and vanilla; mix well.
Combine flour, baking powder, bsking soda, and salt; add to creamed mixture, mixing well. Stir in oats, nuts and 1 1/3 cups of the coconut.
Drop dough by rounded teaspoonfuls onto greased cookie sheet. Sprinkle with remaining coconut (used equally on all of the cookies).
Bake at 375 degrees F for 8-10 minutes or until lightly browned. cool slightly on cookie sheet; remove to wire rack to cool completely.
Yield: 4 dozen
