CHORIZO AND BEANS (Nicaragua)
2 cups rice, cooked 1 pound chorizo, sliced 1 medium onion, chopped 3 cloves garlic, chopped 1 tablespoon olive oil 3 cups beans, cooked 1 tablespoon ground chipotle 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon dried cilantro 1 teaspoon annatto seasoning salt and pepper, to taste
Cook rice as directed.
In saute pan, saute chorizo, onion, and garlic in olive oil.
When onion is transparent, drain grease and add remaining ingredients cook until warmed through.
Stir into rice and serve.
