Ice Cream Grasshoppers

8 Oreo-type chocolate cookies
1 pint vanilla ice cream, softened
1 Tbsp creme de menthe

Crumb cookies in blender. Mix together softened ice cream with creme de menthe until well blended. In four freezer safe parfait glasses, alternate layers of ice cream and chocolate crumbs. Freeze until ready to serve. Looks pretty, tastes good and is a fast dessert.
