CONCH BURGERS
1 lb conch (fresh or frozen), ground 2 eggs, slightly beaten 6 tbsp. celery, chopped fine 4 tbsp. sweet red pepper, chopped 2 tbsp. butter or margarine 2 tbsp. lime juice 1 tbsp. Worcestershire sauce 1/2 tsp. thyme 1/2 tsp. salt 1/4 tsp. garlic powder 1/8 tsp. hot pepper sauce 3/4 cup bread crumbs oil (for frying)
Grind conch to the texture of ground beef. Mix with remaining ingredients except bread crumbs and oil.
Add bread crumbs and mix with hands, to form burgers.
Heat oil in a skillet. Saute burgers for 15-20 minutes, turning to cook each side.
TO SERVE: Serve with barbeque sauce, ketchup or top with cheese.
