Pepper-Ring Burgers
1 pound beef chuck, ground 3/4 cup soft bread crumbs 1 teaspoon salt 1/8 teaspoon pepper ¼ cup milk 6 bell pepper rings, 2 ½ inches across, ½ inch thick 1 Tablespoon shortening Bottled barbecue sauce 6 split sandwich rolls, heated
Mix beef, crumbs, salt, pepper and milk. Shape into 6 patties. Press patties into pepper rings, making sure meat covers the cut edge of pepper ring on both sides. Brown patties on both sides in hot shortening in skillet. Baste with sauce so both sides are covered. Cook to desired doneness and serve in rolls. Makes 6 servings.
