Old Pineville Depot Restaurant Jalapeno Corn Pudding Source: Favorite Restaurant Recipes by Bon AppetitServings: 9-12 1 1/2 cups creamed corn 1 cup yellow cornmeal 1 cup (2 sticks) butter, melted 3/4 cup buttermilk 2 medium onions, chopped 2 eggs, beaten 1/2 teaspoon baking soda 1 1/2 to 2 cups grated sharp cheddar cheese. divided use 3 jalapeno peppers (fresh or canned), diced Preheat oven to 350 degrees F. Grease 9-inch square baking pan. Combine corn, cornmeal, butter, buttermilk, onions, eggs, and baking soda in large bowl and mix well. Turn of the 1/2 batter into the prepared pan. Cover evenly with 1/2 of cheese, then peppers, then remaining cheese. Top with remaining batter. Bake 1 hour. Let cool 15 minutes. Cut into squares.
