HERBY TOMATO BRUSCHETTA
450g (1 lb) ripe tomatoes, chopped 2 garlic cloves, finely chopped 1 tbsp freshly chopped basil leaves 1 tbsp freshly chopped marjoram 1 tbsp freshly chopped parsley 1 tbsp balsamic vinegar 1 tbsp olive oil 1 tsp lime or lemon juice salt and black pepper TO SERVE: 8 (2.5cm / 1-inch thick) slices of baguette, toasted
Place the tomatoes, garlic, herbs and vinegar, oil, and lime juice in a large mixing bowl, season with salt and pepper and stir together well.
TO SERVE: Place the toasted bread on a serving platter and spoon the tomato mixture over the top. Serve at room temperature.
