APPETIZER SHRIMP KABOBS
2 lb unpeeled large fresh shrimp MARINADE: 1/2 cup lemon juice 1/2 cup vegetable oil 1/4 cup soy sauce 3 tbsp chopped fresh parsley 2 tbsp finely chopped onion 1/2 tsp salt 1/2 tsp pepper 1 clove garlic, minced
Peel shrimp and devein; set aside.
TO PREPARE THE MARINADE: Combine lemon juice, oil soy sauce, parsley, onion, salt, pepper, and garlic in a shallow dish; set aside.
Arrange shrimp on 6-inch bamboo skewers and place in marinade, turning to coat. Cover and refrigerate 2 to 3 hours.
TO COOK THE SHRIMP: Preheat broiler.
Remove shrimp from marinade. Place shrimp skewers on rack of a lightly greased broiler pan.
Put marinade in a small saucepan and boil 2-3 minutes; set aside for basting.
Broil 6 inches from heat 3 to 4 minutes on each side, basting occasionally with the marinade. Serve hot or cold.
