P.B COOKIES

Preheat oven to 375 degrees F.

CREAM TOGETHER:
1 cup shortening (Crisco butter-flavored shortening works well)
1/4 cup peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar
2 eggs
1 teaspoon vanilla

ADD:
1/2 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups quick-cooking rolled oats
2 cups chocolate chips
1 cup pecan pieces (don’t chop pecans-they tend to make the cookie greasy)

Mix well. Drop by teaspoonfuls on greased cookie sheets.

Bake at 375 degrees F for about 10 minutes. Remove from oven before top of cookie appears to be done for a moister cookie.

Makes about 4 dozen
