CHICKEN BARLEY CASSEROLE
1 cup pearl barley 1/2 cup butter or margarine 1 medium onion, chopped 1 envelope dried onion soup mix 1 4-ounce can mushrooms, drained 1/3 cup almonds, slivered 2 cups chicken broth 2 cups chicken, cooked and diced
Heat oven to 350 degrees F.
In a skillet, over medium heat, melt butter and brown barley for about 2-3 minutes.
Add onion and saute until onion is soft, about 5-7 minutes longer.
Add remaining ingredients and simmer for 5 minutes. Place in a greased casserole dish, cover with a lid or with aluminum foil.
Bake for 1 hour.
