FRESH TOMATO SOUP
Three or four fresh tomatoes 1 1/2 cups water 1/2 cup minced celery 1/2 cup minced onion 2 tablespoons minced cilantro 2 tablespoons fresh lime juice 2 chicken bouillon cubes Freshly ground pepper to taste lime wedges (for garnish)
Peel and quarter tomatoes. Place in a large heavy pan. Add all the other ingredients. Bring to a boil, stir well, and reduce to a simmer. Simmer 10 minutes or until celery and onions are tender. Remove from heat.
Beat on high with an electric mixer for about 30 seconds or until mostly smooth. Small pieces will remain.
Serve immediately with wedges of lime for garnish.
