APPLE AND PEAR SALSA

1/4 cup pineapple juice
2 tbsp. fresh lime juice
3 pears; unpeeled, diced
3 medium to large apples, unpeeled and diced
3 chilies; seeded, minced
2 tbsp fresh mint, minced (I like apple mint)

Mix the pineapple juice and lime juice in a plastic or glass bowl.

Add the diced pears and apples and stir to combine, making sure all the fruit is coated with juice. Add the chilies and mint.

Use with tortilla chips or as a condiment with poultry or meat.
