NATURAL KETCHUP
5 pounds fully ripe tomatoes 1/3 red pepper, chopped 1/3 green pepper, chopped 1 large onion, chopped 1 stalk celery, cut up 1 teaspoon mustard seed 1 teaspoon ground dry basil 1 teaspoon paprika 1 teaspoon Spike seasoning or 1 teaspoon sea salt(optional) 3/4 teaspoon ground allspice 1/3 teaspoon granulated garlic or powder (not garlic salt) Dash cayenne pepper 1 large whole bay leaf 1 teaspoon cinnamon 2/3 cups raw, brown sugar, honey, or sweetener of your choice 1/3 cup apple cider vinegar
Put tomatoes through a food processor. Add peppers, onions, celery, and process a portion at a time until smooth.
Add mustard seed, basil, paprika, Spike seasoning, allspice, garlic, and cayenne pepper. While processing add brown sugar and apple cider vinegar.
Put all in a heavy pan. Add bay leaf and cinnamon. Simmer on low heat for a couple of hours until thick. Remove bay leaf.
Jar and keep refrigerated.
