At the Cafe Latte on Grand Ave in MN they do amazing desserts and here is one that they did several years ago, written out for me (as well as for anyone else who was interested) by an erstwhile Cafe Latte dessert chef. I give you his original quantities as I am sure many of you know better than I how to divide 18 eggs by four!
36 oz Semi-sweet chocolate 1 c. Espresso
3 c butter 5 c sugar
18 eggs - yolks separated 3 c flour
1. Melt the chocolate together with the espresso in a double boiler, set aside. 2. Cream the butter, and sugar - beating well. Add the eggs slowly. Beat well. Add the flour slowly. 3. Slowly add the chocolate mixture to the batter mixture. 4. Beat egg whites, add 1 c. sugar and beat until stiff peaks form. 5. Fold whites into chocolate mixture. 6. Pour into 4 x 8" springform pans. 7. Bake at 350° for approx 50 mins or until cake tester comes out just clean. 8. Lightly press down on tops of cakes while still hot. Cool 1/2 hour and then remove sides of pans.
Frosting
8T butter 2c sugar 2/3c milk 4c semi-sweet chocolate
1. bring to full boil, whisking 2. Add chocolate, whisking. 3. Add some coffee for smoothness. 4. Drip, drizzle and slosh over cakes. |
