VEGETABLE QUICHE CUPS TO GO
This is a great side dish that can even be taken to work. Using only egg whites cuts down on the fat and cholesterol.
1 (10 oz.) package of frozen spinach 3/4 cup egg whites 1/4 cup diced green peppers* 1/4 cup diced onions* 3 drops hot-pepper sauce ** or red pepper flakes
Preheat oven to 350 degrees F. Line a 12 cup muffin pan with foil baking cups. Spray the cups with cooking spray.
Microwave the spinach for 2 1/2 minutes on high. Drain the excess liquid and place in a bowl.
Add the remaining ingredients to the spinach and mix well. Divide evenly among the prepared muffin cups.
Bake at 350 degrees for 20 minutes or until knife inserted in center comes out clean.
Quiche cups can be frozen and reheated in microwave.
*Any combination of appropriate vegetables can be used.
