1/2 pound bacon, diced 2 pounds potatoes, cooked and diced (about 4 cups) 1 cup milk 3 eggs 1 teaspoon salt 1/8 teaspoon pepper
Preheat oven to 350 degrees F. Coat a 2-quart baking dish with non-stick cooking spray..
Fry bacon in skillet until half done; drain off fat.
Combine potatoes and bacon. Place in prepared baking dish.
Beat milk, eggs, salt and pepper. Pour mixture over potatoes and bacon.
Bake for about 30 minutes or until set.
Makes 6 servings.
