FAST VEGETARIAN TACOS
If desired, use plain instant white rice and flavor it with a few snips of cilantro and a spritz of lime juice.
1 can (15 ounces) black beans 1 bag (about 9 ounces) Uncle Ben’s Ready Rice, Spanish Style 6 small (6-inch) corn or flour tortillas 1 cup pico de gallo or other fresh salsa
Place beans in microwave-safe bowl. Microwave on high about 2 1/2 minutes or until hot. Set aside.
Heat rice according to package directions.
Stack all six tortillas between two damp white paper towels and microwave on high about 30 seconds until warm.
For each taco, spoon about 1/4 cup beans and 2 to 3 Tablespoons rice into a tortilla. Top with salsa and fold.
