COTTAGE POTATOES
3 large Idaho potatoes
1/4 cup (1/2 stick) butter, divided use
1 cup cottage cheese
1/2 medium onion, diced
salt and pepper to taste
paprika
Preheat oven to 350 degrees F.
Scrub potatoes. Slice them and put in a pot with water to cover. Boil potatoes till tender, drain and mash them with 2 Tbsp. butter.
Add cottage cheese, onion, salt and pepper. Stir mixture gently, then put in a greased casserole dish. Dot with 2 Tbsp. remaining butter and sprinkle with paprika.
Bake, uncovered and 350 degrees for 30 minutes.
