Ceylonese Consommé Source: The whole World Cookbook, Jacqueline Killeen, 1979
This delicious consommé needs no garnish. It is a perfect soup to serve guests in the living room before sitting down to dinner. Serves 6-8
7 cups peeled & diced tart apples 3/4 cup minced onions 1 cup chopped celery leaves 3 tb butter 2 tsp curry powder or to taste 1 quart rich consommé 3 cups half & half
Sauté apple, onion & celery leaves in butter until onion is translucent. Sprinkle with curry powder & cook & stir 3 to 4 minutes. Add consommé & bring to boil; simmer 15 minutes. Strain & adjust seasonings. Add half & half and reheat to serving temperature.
