Arroz Brasileiro (Brazilian Rice)

1/4 cup olive oil
2 onions, finely chopped
1 1/2 cups rice
3 cups hot chicken broth
2/3 of a 14-ounce can of Italian-style tomatoes, drained and chopped
salt to taste
fresh tomato wedges and coriander leaves for garnish

Heat oil in a saucepan over medium heat. Add onions and sauté until transparent.

Add rice and cook, stirring constantly, until grains are coated with oil and rice is hot, about 3 minutes.

Add broth, tomatoes and salt; bring to a boil. Reduce heat to low.

Cover and cook until done, about 20 minutes. Garnish with tomatoes and coriander leaves.

Makes six servings.
