Adas Biz-Ruz (Rice and Lentil Soup)(Egyptian) Serves six.
3 tablespoons olive oil 2 medium onions, finely chopped 3 cloves garlic, crushed 2 cups red lentils 5 cups water or stock 1/2 teaspoon paprika 1/2 teaspoon coriander 1/2 teaspoon cumin pinch of nutmeg juice of 1 lemon salt and black pepper 1/2 cup rice, washed
Heat the oil in a heavy pan and add the onion and garlic. Fry, while stirring, until the onion is very lightly browned.
Stir in the lentils and mix well. Add the water or stock, spices and lemon juice, and season to taste with salt and pepper. Bring to a boil, reduce heat, cover and simmer for 45-50 minutes, or until the lentils are starting to disintegrate. Add the rice and return to a boil, reduce heat, cover and simmer for 15-20 minutes or until rice is tender. Adjust seasoning and serve.
