Cuban Carne con Papas Typical Meat and Potatoes (Cuban Dish)
1/4 cup olive oil (or less) 2 large onions 8 minced garlic cloves 2 chopped green pepper 3 chopped ripe tomatoes 1 tablespoon oregano 1/2 tablespoon cumin 2 1/2 pounds beef top round, cut into 1-inch cubes 1 tablespoon olive juice (from the can of olives)/I substitute it with 1 Tb Balsamic vinegar 8 chopped pimento stuffed olives 1/4 cup raisins 4 large peeled potatoes cut into squares 1 teaspoon salt (or more to taste) 1-2 (to taste) envelope Sazón con Culantro y Achiote (to give color to the dish)
Saute onions and green peppers till caramelized. Add garlic, tomatoes, spices, salt, olives and meat. Saute 5 more minutes. Add potatoes and water to cover all ingredients. Simmer till potatoes are tender, about 30 minutes.
Serves 8. Serve over white rice. |
