This is a recipe from Woman's Day magazine.
Bayou Green Beans
2 pounds green beans 1/4 pound slat pork or 1 ham hock 1 teaspoon sugar 1/4 teaspoon freshly ground pepper 4 cups boiling water 2 large red bell peppers, halve, seeded and diced
Wash and tip green beans; cut into 1-inch pieces with a paring knife; place in a large saucepan.
Score salt pork or ham hock and add to saucepan with sugar, pepper and boiling water; cover saucepan.
Cook over low heat 2 1/2 hours; add diced red pepper; simmer 30 minutes longer, or until water is almost evaporated. Transfer to serving bowl.
