AFRICAN VEGETARIAN STEW
4 small kohlrabies, peeled and cut into chunks* 2 sweet potatoes, peeled and cut into chunks 5 fresh tomatoes, peeled, seeded, and chopped or 1 (16 ounce) can tomatoes 1 large onion, chopped 2 zucchini, sliced thick 1 (15 ounce) can garbanzo beans (chick-peas) with liquid 1/2 cup couscous or bulgur wheat** 1/4 cup dark or golden raisins 1 teaspoon ground coriander 1/2 teaspoon ground turmeric 1/2 teaspoon ground cinnamon 1/2 teaspoon ground ginger 1/4 teaspoon ground cumin 3 cups water
Combine all the ingredients in a large saucepan. Bring to a boil, lower the heat, and simmer until the vegetables are tender, about 30 minutes.
*Parsnips may be substituted for the kohlrabi. **Cook and serve the couscous separately, if desired.
