CALDO VERDE SIPS

Caldo Verde is a classic Portuguese soup made from potato, kale, and spicy chorizo sausage. We shrunk the serving size down to a couple of tasty sips, to be served in an espresso cup as an appetizer on a cold evening.

1 tbsp olive oil
1/2 cup red potatoes, peeled and sliced thinly
1/4 cup onion, small diced
1/4 cup chorizo sausage, small diced
1/2 cup kale, shredded
salt
freshly ground black pepper
2 cups chicken stock

Heat the olive oil to medium heat, in a medium sauce pan. Add the potatoes, onions, and chorizo and cook, stirring frequently until tender and translucent.

Add the chicken stock and bring up to a simmer until potatoes are soft. Puree soup with a hand blender until relatively smooth.

Add kale and allow to steam in the hot soup until tender.

Adjust seasoning with salt and pepper. Serve in espresso cups with a small spoon on the side to assist.
