Strawberry Sandwiches Makes 6
3 brioche rolls [about 80gm each], cut into 1/2cm-thick slices 1/2 cup thick cream 11/2 tbsp icing sugar, plus extra to serve 1 tsp vanilla bean paste [see note] 350gm strawberries, hulled and thickly sliced
Toast brioche slices on each side until golden. Combine cream, 1/2 tsp icing sugar and vanilla paste in a bowl and whisk until thick. Place strawberries in a bowl, add remaining icing sugar and coarsely crush using a fork.
To serve, place one-third of brioche pieces on a work surface, spread with half the cream mixture and top with half the strawberries. Repeat layering, finishing with a piece of brioche. Serve dusted with icing sugar.
Note: vanilla bean paste is available from Simon Johnson and supermarkets. Alternatively, use the seeds from a vanilla bean.
