PICNIC CHICKEN SALAD BOWLAdapted from:
365 Easy One Dish Meals by Natalie H. Haughton1 1/2 lb zucchini, chopped
4 tomatoes, chopped
1 (16 oz) pkg frozen peas, thawed and drained
1 green bell pepper, chopped
1 yellow bell pepper, chopped
2 cups diced cooked chicken
3/4 cup bottled Italian dressing (or to taste)
3 tbsp grated parmesan cheese {optional}
In a large bowl, combine all ingredients. Toss to mix well.
Cover and refrigerate for several hours.
Drain and serve on lettuce.
