GRANDMA'S HOMEMADE HARVEST TIME SOUP
Source: Cooking Healthy With a Man in Mind by Joanna M. Lund
Servings: 4 (1 1/2 cups each)

8 ounces around 90% lean turkey or beef
1/4 cup chopped onion
1 cup (one 8 ounce can) Hunt’s Tomato Sauce
1 3/4 cups (one 14 1/2-ounce can) stewed tomatoes, undrained
1/2 cup water
1 teaspoon dried parsley flakes
drained
1 cup (one 8 ounce can) cut green beans, rinsed and drained
1 cup (one 8 ounce can) sliced carrots, rinsed and drained
1/2 cup frozen peas, rinsed and drained
1/2 cup frozen whole kernel corn

In a large saucepan spaved with butter-flavored cooking spray, brown meat and onion.

Add tomato sauce, undrained tomatoes, water, parsley flakes, green beans, and carrots. Mix well to combine. Bring mixture to a boil.

Stir in peas and corn. Lower heat and simmer 10 minutes.
