APPLESAUCE MAPLE MUFFINS2 cups whole wheat flour 1 tablespoon baking powder 1 1/4 cups unsweetened applesauce 1/2 cup maple syrup 2 egg whites 1/2 cup dark raisins or chopped walnuts Preheat oven to 350 degrees F. Coat 12 muffin cups with nonstick cooking spray. Combine the flour and baking powder, and stir to mix well. Add the applesauce, maple syrup, and egg whites, and stir just until the dry ingredients are moistened. Fold in the raisins or walnuts. Fill prepared muffin cups 3/4 cull with the batter. Bake at 350 degrees F. for 16 to 18 minutes, or just until a wooden toothpick inserted in the center of a muffin comes out clean. Remove the muffin tin form the oven, and allow it to sit for 5 minutes before removing the muffins. Serve warm or at room temperature.
