Radio Pudding
This is a good cold-weather dessert. It's warm, soft and comforting and it's been in the family for years. It also goes together very quickly and easily. We don't know the origin of the name but we suspect my grandmother copied it down one day while she was listening to the radio.
Combine in deep kettle and bring to boil: 3 cups water 1 cup light brown sugar (firmly packed) 3 teaspoons butter 1/4 teaspoon salt
Make a batter of: 1/2 cup milk 1/2 cup granulated sugar 1/4 teaspoon salt 1 cup flour (slightly rounded) 2 teaspoons baking powder 1 teaspoon vanilla 2 tablespoons butter
Sift dry ingredients. Add to creamed mixture alternately with milk and vanilla. Beat well. Drop by teaspoons into boiling syrup. Boil gently (covered) on top of stove for 15 minutes. Best if served warm.
