Bean and Pasta Minestrone Recipe By : Canadian Living - November, 1991 Yield: 6 servings
1 can stewed tomatoes -- (14 oz) 1 potato -- diced 1 carrot -- diced 1 onion -- chopped 1 clove garlic -- minced 1/2 teaspoon each dried thyme and oregano and basil 1/4 teaspoon pepper 1 can kidney beans -- (14 oz) drained 4 cups beef stock 1 cup macaroni 1 small zucchini -- diced 1 cup chopped raw spinach salt and pepper 2 tablespoons freshly grated Parmesan cheese
In saucepan, bring to boil tomatoes, potato, carrot, onion, garlic, thyme, oregano, basil and pepper. Reduce heat; simmer, stirring occasionally, for 10 minutes. Add beans, stock, macaroni and zucchini; bring to boil. Reduce heat; cook for 8 minutes or until macaroni is tender but firm. Add spinach; cook for 2 minutes.
Season with salt and pepper. Garnish with cheese. |
