RICE-BOTTOM PIZZA
FOR THE CRUST: 1 cup cooked rice (about 1/3 cup) 1 cup grated Parmesan cheese 1 egg, beaten 1 tablespoon butter or margarine FOR THE TOPPINGS: 1 cup tomato paste 3 tablespoons water 1/2 pound sausage or ground beef (or mixture of both) 1 onion, diced 1/2 green pepper, chopped (optional) salt and pepper (to taste) oregano (to taste) shredded mozzarella cheese
PREPARE THE CRUST: Preheat the oven to 350 degrees F.
Mix all crust ingredients together and place in a round baking dish or pizza pan; press the dough with a fork until 1/4-inch thick.
Bake in preheated oven for 10 minutes. Remove and let cool.
PREPARE THE TOPPINGS: Mix tomato paste and water; set aside.
Cook the meat with onion over medium heat, until meat is brown. Remove from heat; add peppers, salt, and pepper.
When crust is cool, evenly spread the tomato paste mixture and sprinkle with oregano. Spread with the meat filling; top with Mozzarella.
Bake at 350 degrees F until cheese is melted.
