GRANDMA'S MOLASSES BANANA BREAD

1/2 cup butter or margarine, softened
1 egg
1 cup Grandma's molasses (not sure if this is the correct amount, maybe try 1/2-3/4 cup)
3 large bananas, mashed (about 2 cups)
1 cup whole wheat flour
3/4 cup all-purpose flour
2 tsp. baking soda
1/2 tsp. ground nutmeg
1/2 tsp. finely grated orange rind
1/2 tsp. salt
1/2 cup pecans or walnuts, chopped or raisins (optional)

Preheat oven to 350 degrees F. Grease and flour a 9x5-inch loaf pan.

Cream butter or margarine. Beat in egg, molasses and banana.

Mix in remaining ingredients, just until blended. Pour into prepared loaf pan.

Bake in 350 degree F oven for 50 to 60 minutes. Cool on wire rack.

Makes 1 loaf


GRANDMA'S BANANA BREAD (less molasses)

4 tbsp. butter, softened
3/4 cup Grandmas Original Molasses
1/4 cup sugar
1 1/4 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
2 eggs
3 bananas, ripe; mashed
1/2 cup chopped nuts (optional)
1/2 cup chocolate chips (optional)
1/2 teaspoon orange zest (optional)
1/2 teaspoon ground nutmeg (optional)

Heat oven to 350 degrees F.

Cream butter, molasses and sugar.

Whisk together flour, salt and baking soda. Combine with butter mixture until consistency resembles brown sugar. Beat in eggs. Fold in remaining ingredients. Pour into greased loaf pan.

Bake 50-60 minutes. Cool.

Makes one loaf
