GRANDMA'S HOT WATER GINGERBREAD

2 1/2 cups sifted enriched flour
2 tsp. cinnamon
1 tsp. baking powder
1 tsp. salt
1 tsp. ginger
3/4 tsp. baking soda
1/2 tsp. cloves
1/2 cup shortening
1/2 cup sugar
1 cup Grandma's Molasses
1 egg, unbeaten
1 cup boiling water

Preheat oven to 350 degrees F. Grease and lightly flour an 9x9-inch square baking pan.

Sift together first seven ingredients.

Cream together shortening and sugar. Add molasses and mix well. Stir in 1/2 cup sifted dry ingredients. Beat in egg. Add the remaining dry ingredients, alternately with hot water. Beat 1/2 minute. Pour batter into prepared pan.

Bake 45 to 50 minutes in a moderate 350 degree F oven or until gingerbread tests done.

Servings: 10 to 12
