Chicken and Barley Stew

1 c pearl barley
1/2 c quinoa
1 skinless boneless chicken breast -- bite-sized pieces
2 med carrots -- chopped
2 celery -- ribs
1/2 lg purple onions -- chopped
2 cloves garlic
1 tsp sage
1 tsp thyme
1 tsp poultry seasoning
20 oz nonfat chicken broth
water -- to cover and additional as need

Brown the chicken in a frying pan sprayed with nonstick cooking spray. Put it and all the other ingredients into a crockpot with enough water in to cover everything. Cook on low about 7 hrs checking it every few hours so it doesn’t cook dry.
