CHICKEN AND MANGO WITH CITRUS DRESSING
FOR THE CITRUS DRESSING: 1/4 cup orange juice 3 tablespoons soy sauce 1 tablespoon fresh lime juice 1 teaspoon dark sesame oil 1 teaspoon sugar FOR THE SALAD: 1 1/2 pounds romaine lettuce, divided use 2 cups cubed cooked chicken* 1 cup diced fresh mango 1/2 cup chopped fresh mint 1/2 cup chopped fresh cilantro 1 small cucumber, peeled, seeded, diced
Whisk together all ingredients for the Citrus Dressing until blended; set aside.
Shred 3 lettuce leaves, reserving remaining lettuce.
Combine shredded lettuce, chicken, and next 4 ingredients in a large bowl. Add 1/3 cup Citrus Dressing to chicken mixture, and toss to coat. Cover and chill 30 minutes.
Serve over reserved lettuce leaves, and drizzle with remaining Citrus Dressing.
*VARIATION:
For Shrimp and Mango With Citrus Dressing: Substitute 3/4 pound peeled and cooked shrimp for 2 cups cubed chicken.
