WEIGHT WATCHERS BRAISED ENDIVE WITH LEMON4 medium head endive, trimmed
1/2 cup chicken broth
1 tablespoon fresh lemon juice
2 teaspoons chopped fresh parsley
1/4 teaspoon grated lemon zest
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
Preheat the oven to 350 degrees F.
Arrange the endive in a 9x13-inch baking dish; add the broth and lemon juice.
Cover with foil and bake until fork-tender, about 25 minutes.
Remove the foil; bake 5 minutes longer.
Serve, sprinkled with the parsley, lemon zest, salt and pepper.
